In Bulk or By the Box?

In bulk or buy the box? 
Okay, that should read by the box, but the pun was too hard to resist :) 

Really, the difference between buying in bulk or by the box is two-fold: price and quantityRead on for the breakdown... 

Beef in Bulk  (Quarters and Sides) $4.00/pound˙

What does "in bulk" look like exactly? Well, typically people buy:
  • A side (half of the entire amount of beef possible), or
  • A quarter, or 
  • The works (all of it!)
     We offer the above options for those of you who would like to buy in bulk. That's great, fine and dandy you say, but just how much meat is that exactly you ask? Well, the average amount of beef before harvesting is 700-750 pounds. Based on that, you buy either 350-375lbs per side, or 175-188 lbs for a quarter. WHAT? Does that mean that you need to clear out your freezer to make room for 175-375 pounds of beef? No it does not, we promise! Worry not! How does it work then?

     As per industry standard, costs are calculated using the dressed weight, in other words, the hanging weight of the animal before the butcher gets busy doing his part of the job cutting off all of that fat and those big ole' bones (about 20% of the total weight). So the amount that goes in your freezer is quite manageable, and the butcher is really great at packaging all of it in neat and tidy boxes. 

The benefit of having and using an industry standard (i.e the dressed weight pricing) allows us to compare and therefore competitively price our beef with respect to others in the same line of business (and helps you compare apples to apples as well... Not to mention that the butcher bills us by the dressed weight too; it's just the way beef in bulk is normally priced.

*Note: This pricing method is only applied to beef in bulk (when you buy a quarter, side, or whole animal). 

**Important: All our beef is dry-aged. Essentially that means that the dressed weight (above) is still the final price, but there is some additional shrink involved with dry-aging as the natural moisture evaporates. It's important to note that unlike beef that is not dry-aged, ours doesn't really shrink when you're cooking it because that moisture has come out with the dry-aging. Check out our "Yum, Dry-Aged Beef page for more details, including the reason that dry-aging makes your beef taste so incredibly yummy.

Beef "By the Box" 30lb Variety Boxes 


 If you love beef but are limited by freezer space or a budget constraints then the box option is designed just for you! Your box will contain a full 30 lbs of very very yummy beef (if we do say so ourselves!). Our variety boxes are also natural and dry-aged, and less expensive than what you will typically see in grocery stores. 

Many of our customers choose to buy the variety boxes for 3 main reasons: 
1) They don't have the freezer space for an entire quarter or side
2) They are only buying for a family of one or two
3) The immediate up-front cost is less. 

1) 30lb Summer Variety Box $250
Steak-a-licious! 

Each 30lb Summer Variety Box will have approximately
  • 12 Steaks in total 
    • Steaks are usually 10-20oz (depends on the size of the animal, but they tend to be huge) 
    • There's a variety of Prime Steaks (eg. Prime Rib, Porterhouse, Sirloin Tip, etc and Choice (Sirloin, Wing, Round etc), and a few will be boneless, too
  • 11-13  pkgs. Ground Beef (1lb. each), perfect for BBQ Patties
  • pkg. Soup Bones (2 per bag)

  • NOTE: Butchering is an art, and so we can only give an approximate of what is in the box. For instance, you might get an extra steak and one less ground beef.  Thanks!

2) 30lb All Season Variety Boxes $250

 Here's what your 30 lb box will look like (approximately)
  • 11 lbs of ground beef (somewhat lean, but no shrinkage when cooking),
  • 8 steaks in total
    • Steaks are usually 10-20oz (depends on the size of the animal, but they tend to be huge) 
    • 4 prime (from a variety of T-bone, Porterhouse, Prime Rib, and Sirloin) and 
    • 4 choice steaks (from a variety of Round, Blade, and Wing),
  • 2 roasts (3-5lbs each),
  • 2 lbs of stewing beef, (great for shish-kabobs, stir fry, stew and fajitas)!
  • 1 package of soup bones (2 per bag)
